Deep red, dense meat with the yellow carotene-rich fat only grass puts there. Regionally processed, fully USDA inspected, vacuum sealed. $275, available monthly.

This is a real portion of a real animal — pasture raised in the Inland Northwest and grass fed and finished, start to end. No feedlot, no grain finish to force a fast gain, no nameless beef trucked in off a national supply chain.

That difference is visible the moment you open the vacuum seal. The meat is dense and deep red. The fat is yellow and carotene-rich — the color grass puts there, and the color you will almost never find in supermarket beef. It cooks different. It eats different. It is different.

Weights are estimates. Every animal cuts out a little different, and we’d rather say that plainly than pad a number to make a page look clean.

Processing

Harvested and cut at a regional plant under full USDA inspection. Every package vacuum sealed for freezer life. We use the small processors in our own region on purpose — the money you spend here stays in the Inland Northwest instead of leaving it. That is the point of buying direct.

Payment

Payment is due when your cattle are gathered, typically a few days before harvest. You’ll receive a harvest notification and an invoice at that time. We bill the card on file or deposit your check, with payment due within 48 hours of that notice.

Why start at 18 lbs

A quarter or a half is a real commitment of freezer space and cash. The 1/16 isn’t. It’s enough beef to feed a household for weeks and enough variety to actually judge the product — ground for weeknights, steaks and roasts for the rest. Like it, and step up to an eighth or a quarter. Don’t, and you’re out one share instead of a season.
