A pork shoulder roast is a cut of meat from the shoulder of a pig that's often slow-roasted. It's also known as a picnic roast or Boston butt. What it is:

  • A primal cut of meat from the pig's shoulder 
  • A triangular cut that's often sold with the skin on and fat 
  • A flavorful cut with a lot of connective tissue and fat 
  • A forgiving cut that becomes more tender as it cooks 

How to cook it:

  • Cook it low and slow to break down the collagen and melt the fat 
  • Cover it and add liquid to the pan for most of the cooking time 
  • You can cook it until it's tender enough to pull apart, or you can leave the top browned for slicing and shred the bottom for tacos, sandwiches, or salads
